Transportation of Potentially Hazardous Foods Guideline

This guide is to aid in the protection of potentially hazardous foods from the numerous potential sources of contamination that may occur during transportation. The guide is applicable to transport operators of potentially hazardous foods and applies to temperature control to prevent the rapid and progressive growth of disease causing or spoilage organisms that are naturally present in foods and the environment or those introduced through incidental contamination in transit.
